Easy, High Protein Energy Bites

These easy energy bites are foolproof and can be a great lunch box snack. The basic version is nut free, but these can be customized with nuts, too.

Ingredients
  

  • 40 Pitted Dates
  • 2 cups organic oats
  • 1/2 cup superfood, like chia or hemp seeds
  • 2 to 3 scoops protein powder Sunwarrior is out favorite
  • 1 pinch salt

Equipment

  • 1 Food Processor

Method
 

  1. Soak the dates in boiling water for about 5 to 7 minutes to soften.
  2. Meanwhile blend the oats in a food processor to break them up a bit, about 30 seconds.
  3. Add the dates and blend a bit more.
  4. Add the superfoods and protein powder and salt and blend until the mixture is a bit sticky.
  5. Take out just enough to roll into about a 1.5" ball. Roll it in your hands and then roll in coconut flour or coconut sugar to help them not stick to each other in the container. If you are adding mini chocolate chips, now is the time to roll a few of them in, as well.
  6. Place in an airtight container and keep in fridge or freeze. These make great lunchbox treats - take them out of the freezer and they will be perfect by the time lunch rolls around.
